Ingredients: 4 fresh catfish fillets 1 package House-Autry Fish Fry Water in bowl Oil for frying Directions: In a cast iron skillet or electric frying pan, preheat oil to 375°F. Test with thermometer or by sprinkling a little breader mix in oil - if it bubbles up golden brown, oil is ready. Dip catfish fillets in water, shake off excess, and either roll in Fish Fry mix on plate or shake in large re-sealable plastic bag to thoroughly coat fillets. When oil is proper temperature, gently place catfish fillets into the skillet, leaving room around each piece for oil to flow. Fry fish for 2-3 minutes and check for golden brown color. Drain on wire racks with paper towels. Meal Suggestions: Serve with fresh, hot corn on the cob, potato salad or coleslaw and House-Autry hushpuppies with tartar sauce on the side.
