SauerkrautRecipes.com presents a Sauerkraut Salad recipe from Jackie Shen, executive chef of Chicago's Red Light restaurant. This and other recipes from nationally known chefs can be found on www.SauerkrautRecipes.com.
1 32 oz. jar of Frank's sauerkraut rinsed and drained
1/4 cup shredded carrot
1 small red onion sliced
3 stalks green onion (green part only)
1 8 oz. can mandarin orange segments (drain and reserve juice)
1 juiced lemon
1 tsp. salt
2 tbs. chili flakes
Toss all ingredients together in a large bowl. Add juice of lemon, reserved juice of mandarin orange, salt and chili flakes. Toss again. Arrange on platter.
1 32 oz. jar of Frank's sauerkraut rinsed and drained
4 10 oz. pork chops
1 pound Kielbasa cut into four pieces
1 medium onion thin sliced
1/2 pound diced bacon
1 tablespoon caraway seed
3 tablespoons vegetable oil
3 cups chicken broth
Brown bacon in an 8 quart stock pot over medium heat. Add onion, Kielbasa, sauerkraut, caraway seed and chicken broth. Bring to a boil, cover and simmer 30 minutes. Peel and boil white potatoes. Preheat oven to 350.
Brown pork chops in a large skillet with 2 tablespoons of the vegetable oil. Place in oven and cook for 25 minutes. Arrange Kielbasa and sauerkraut mixture on a large platter. * 28 oz can Whole Tomatoes
* 1 small can of Tomato Paste
* 3 cloves of garlic
* 1 sweet onion
* 1 Tbs Oregano
* 1/2 Tbs Basil
* 1/2 Tbs Cayenne
* 2 Bay Leaves
* Salt Pepper to taste
* 1 lb. Italian Sausage
* Pasta (any style)
