In Santorini, like everywhere in Greece, eating is a way of life. In the traditional Santorini cuisine besides the wide variety of seafoods best served grilled we can distinguish the following ingredients and dishes: Fava is a puree made with Fava beans. Fava is an old traditional dish of Greece which can be served in many different ways according to the time of the year. What makes the Santorini Fava special is the special taste of the beans due to the volcanic soil on the island. The soil is also responsible for the rich flavour of all fruit and vegetable on the island like Tomatinia or Cherry Tomato which is very aromatic. The White Eggplant, a unique vegetable of the island, is considered the “indigenous” course in Santorini. The island of Santorini is most famously known for its indigenous white grape varieties grown since the Middle Ages like Assyrtiko, Athiri and Aidani.
Brindisi is an old roman port in Puglia, at the heel of Italy. In fact it still has a column marking the end of the Appian way. During Roman times Puglia used to be the major wine producer of the empire. Today it is still the major wine producer in Italy hosting some ambitious wine producers .like the Rubino's. Luigi Rubino showcases his 3 best wines with interesting food pairing at the restaurant Penny in Brindisi. Penny is an old favorite in town housed in a 12th century building and serving some of the most authentic local dishes prepared by Chef cosimo Orfano . The wines Negroamaro Red, Malvasia Giancola and Torre Testa have all unique characteristics given Puglia's 1000 hours more sun than any other region of Italy. Torre Testa is made from a grape called Susumaniello which came from Dalmatia in the 7th century bc. It is exclusively cultivated in Puglia and only in the Brindisi area. The Rubino Estate produces 800,000 bottles a year with 70 % of the production exported to 20 countries.

So, what should one look for as a wine lover wine enthusiast? Look at the geography and the grape varieties. It is easy to fly to Oporto (Porto), there are great hotels, and excellent restaurants, the Vinho Verde region with the alvarinhos. Top alvarinho wines are great. Then you can travel not far and you come to port wine county and also Douro table wines. There are Atlantic wines and inland wines, very, very different in style. You can experience the differences travelling only short distances.

The Willemsfamily have been making Coolea on their farm in Macroom, Co Cork since 1979. They moved from the Netherlands to Ireland in the 1970’s. Gouda was impossible to get locally at the time so they wrote home for a recipe and the rest is history. This is a mild, semi firm cheese when young and is intensely full flavored when mature. 3 Tbsp shaved Coolea Cheese 1 fennel bulb, shaved paper thin bunch of arugula 8oz grape tomatoes (red or yellow or both) 1 Tbsp extra virgin olive oil 1 Tbsp fresh lemon juice 1 cup pecans 2 Tbsp melted butter kosher salt milled black pepper Shave the fennel bulb finely , either with a mandolin or sharp knife. Wash and dry the arugula. In a bowl, whisk the oil and lemon juice, and set it aside. Pre heat oven to 425 degrees. Line a baking sheet with foil or parchment paper. In a small bowl mix together the pecans, melted butter, salt and pepper. Spread them on the baking sheet. Set this sheet aside until ready to put in the oven. Wash and dry the tomatoes. Place them on a baking sheet, lined with parchment paper, sprinkle with olive oil and kosher salt. Roast on the top shelf of the oven for 15 minutes. At the same time put the pecans on the bottom shelf, removing after 3-4 minutes and allow to cool. Allow tomatoes to cool. In a large serving bowl place fennel and arugula, add tomatoes and pecans. Shave Coolea Cheese on top, pour in dressing and toss.

Wine Review: Coopers Creek Gruner Veltliner 2010, Gruner Veltliner is a relatively new grape variety planted in New Zealand. There are 10 or less wineries making Gruner Veltliner commercially but it has a great future with the NZ terroir.

Chamine is the entry level wine, a blend with mainly Portuguese grape varieties (aragonez, trincadeira and touriga nacional) and syrah, made to be fruity, silky tannins, young and fresh, an everyday wine.
The cuvee Cortes de Cima, in a way the flagship of the winery. It is a blend with the same grapes plus a bit of cabernet sauvignon, a bit barrel ageing (French and American oak). More full bodied, more complex, rich, deep.
Then come the varietals:

We talk with Denis Dubourdieu about the trend towards organic wine, organic farming in the vineyards. Denis emphasises that one should not only talk about organic (biological) viticulture! And organic farming has to evolve. For example, it is still allowed to use much copper, copper sulphate, in the soil, and it is not at all organic. It is a metal, mineral, that stays in the soil. Such things have to change. It is also important to use less chemical poisons, for example by using so called sexual confusion in the vineyards to fight the grape worm (vers de la grappe). The sexual confusion with pheromones in capsules makes it possible to dispense with much poison.
