It is high summer in the polar regions, and the sun never sets. Vast hordes of summer visitors cram a lifetime of drama into one long, magical day; they must feed, fight and rear their young in this brief window of plenty. Summer is a tough time for the polar bear family, as their ice world melts away and the cubs take their first swimming lesson. Some bears save energy by dozing on icy sun beds, while others go egg-collecting in an Arctic tern colony, braving bombardment by sharp beaks. There are even bigger battles on the tundra; a herd of musk oxen gallop to the rescue as a calf is caught in a life and death struggle with a pair of Arctic wolves. But summer also brings surprises, as a huge colony of 400,000 king penguins cope with an unlikely problem - heat. The adults go surfing, while the woolly-coated chicks take a cooling mud bath. Nearby, a bull fur seal is prepared to fight to the death with a rival. Fur flies as the little pups struggle desperately to keep out of the way of the duelling giants. Further south, a minke whale is hunted amongst the ice floes by a family of killer whales. The dramatic chase lasts over 2 hours and has never been filmed before. The killers harry the minke whale, taking it in turns to wear it down. Eventually it succumbs to the relentless battering. Finally, comical adelie penguins waddle back to their half a million strong colony like clockwork toys. The fluffy chicks need constant feeding and protection as piratical skuas patrol the skies. When an unguarded chick is snatched, a dramatic "dogfight" ensues.
I produced and edited this profile of Allan Alcorn for the PBS affiliate in the Silicon Valley, KTEH (now branded as KQED+). You probably know that Al is the Father of PONG, but you're going to amazed when you find out the other projects he's had his hand in. Personally, it was a real treat for me to meet Al and spend a few hours with him. Very similar to the structure of Guy Kawasaki's piece: there's an opening scene, a linear story of his life, then a return to the opening scene (which allows me to re-cap the story you were just told). Graphically, it's based on the box of the Atari home version of PONG. Not an outright copy, but it uses the curved line and the bands of orange color. The rest of the graphics were a real egg hunt. Al provided a few pictures from the 1970s, but the rest came from trolling around on Atari tribute sites. I was very sad to cut out an early section about the importance of his Berkeley years. He witnessed the tear gassing of rioters on Telegraph Avenue and considers it to be an important event in his life. It took about thirty seconds for Al to tell the story, and it was only cut because This Is Us had to fit it's running time.

Try Fiona's adventurous recipe using fresh parsley and basil. Ingredients: For the pancakes: 4 ounces plain flour 1 large free range egg Quarter or half a pint of milk Pinch of salt 3 tablespoons of snipped chives Butter for frying Mushroom filling 1 small onion finely chopped 8 closed cap mushrooms finely sliced 1 clove garlic finely minced half packet dried porcini mushrooms 2 ounces butter 1 teaspoons flour Dash of white wine Dash of milk A pinch of sugar salt and pepper 1 large handful of parsley finely chopped Iced cream: 200ml double cream 1 large handful of basil chopped or torn salt and pepper Method: Mix the flour, egg, milk, chives and salt together to make a thin batter. Fry the pancakes in a little butter, drain on kitchen paper and set aside. Pop the porcini in a jug and top up with hot water. Fry the onions in a little butter, adding white wine to stop them burning. After around 8 minutes add the fresh mushrooms and garlic and sprinkle on a tiny bit of sugar which helps the mushrooms caramelise and adds depth of flavour. Sprinkle on the flour, stir and add the porcini liquor and chop the rehydrated porcini. Add these to the pan and mix in a little milk. Season and add the parsley, the filling is done. Whisk the cream until it is quite stiff, add the basil and seasoning and place in the freezer, you can make quenelle shapes before you freeze which is easier. The pancakes keep all day so can be made in advance and microwave to heat up as this keeps them nice and soft and the filling moist.
Alex was the winner of the Herb Hero 2011 competition. She impressed the judges, including celebrity chef John Torode, with her Vietnamese recipe for Bún chá which uses fresh sage, coriander and mint. Try her delicious recipe for yourself: Pork Bún chá Prep: 15 mins Cooking: 15-20mins Serves 4 Ingredients: 50g brown sugar 600ml water 400g minced pork 2 spring onions, trimmed 15g fresh sage leaves 1 tablespoon rice/white wine vinegar 1 tablespoon caster sugar half a large red chilli, deseeded and chopped 1 clove of garlic, crushed 4 teaspoons of fish sauce juice of half a lime 15g fresh mint leaves 15g fresh coriander 75g mixed salad or baby spinach leaves 250g medium egg noodles Method: 1. On a low heat, melt 50g brown sugar in a heavy based pan before adding 600ml hot water and stirring until all is dissolved, cool 5 tbsp of the mixture. 2. Chop the spring onion and sage very finely and then add to the minced pork along with a salt and pepper. Add the 5tbsp of cold caramel broth to the pork and mix again. Now use clean hands to divide the mixture into about 16 x 5cm patties. 3. Arrange the patties on a grill rack and grill under a medium heat for about 15 minutes, tunring halfway through until golden on the outside and cooked through. 4. Bring the the rice vinegar, white sugar and 60ml water to the boil. Remove from the heat and add the chopped chilli, garlic, fish sauce and lime juice leave to cool. 5. Tear the coriander and mint roughly and mix with the salad leaves. 6. Cook the noodles according to pack instructions, then drain. Divide the noodles between four bowls, heap the salad leaves on top, then ladle over the warm caramel broth. Finish by spooning a little of the chilli sauce over each bowl as desired then serve with chopsticks. Enjoy!
