This lactic, pungent cheese from Mary Burns in Kanturk, Co Cork, Ireland has won ‘Supreme Champion’ at the British Cheese Awards. It was this cheese that inspired my recipe for Ardrahan Red Cabbage Salad. 1 head red cabbage 2 celery stalks 1 granny smith apple, cored and chopped 3/4 cup cashew nuts 2 Tbsp olive oil 2 Tbsp apple cider vinegar 6-8 ozArdrahan Cheese 3 oz plain yoghurt 1/2 tsp coriander seeds black pepper Heat a frying pan and add coriander seeds. Gently swirl over a medium heat for a moment or so then remove. Grind them in a mortar and pestle. Add salt, pepper, vinegar and olive oil. Whisk together. Pour this mixture into a larger bowl and add yoghurt. Cut cabbage in half, remove and discard white core. Finely shred the cabbage and put in a large serving bowl. Wash celery and chop into 1” pieces and add to cabbage. To this toss in prepared apple. Dice Ardrahan, add to salad. When ready to serve pour in dressing, toss and sprinkle with cashews. TIP The dressing can be made a few days in advance and refrigerated in a glass jar. It is also a great way of making sure the dressing is well mixed.
The Willemsfamily have been making Coolea on their farm in Macroom, Co Cork since 1979. They moved from the Netherlands to Ireland in the 1970’s. Gouda was impossible to get locally at the time so they wrote home for a recipe and the rest is history. This is a mild, semi firm cheese when young and is intensely full flavored when mature. 3 Tbsp shaved Coolea Cheese 1 fennel bulb, shaved paper thin bunch of arugula 8oz grape tomatoes (red or yellow or both) 1 Tbsp extra virgin olive oil 1 Tbsp fresh lemon juice 1 cup pecans 2 Tbsp melted butter kosher salt milled black pepper Shave the fennel bulb finely , either with a mandolin or sharp knife. Wash and dry the arugula. In a bowl, whisk the oil and lemon juice, and set it aside. Pre heat oven to 425 degrees. Line a baking sheet with foil or parchment paper. In a small bowl mix together the pecans, melted butter, salt and pepper. Spread them on the baking sheet. Set this sheet aside until ready to put in the oven. Wash and dry the tomatoes. Place them on a baking sheet, lined with parchment paper, sprinkle with olive oil and kosher salt. Roast on the top shelf of the oven for 15 minutes. At the same time put the pecans on the bottom shelf, removing after 3-4 minutes and allow to cool. Allow tomatoes to cool. In a large serving bowl place fennel and arugula, add tomatoes and pecans. Shave Coolea Cheese on top, pour in dressing and toss.

http://www.millersgrainhouse.com AWESOME WHEAT TORTILLAS Makes approx. 16-18 6-8" tortillas Ingredients: 4 ½ - 5 Cups fresh milled Soft White Wheat or Kamut or Spelt ½ tsp baking soda 2 tsp Sea salt ¼ Cup olive oil 1 ½ Cups warm water Directions: Drizzle half of the oil over the dry mixture. Combine with either a fork or pastry cutter until almost a fine powder, and then repeat this procedure until oil is gone. CAREFUL - you MAY NOT end up using all the water. Drizzle half of the water over the top of oiled flour and combine - mixture should still be dry. Now while mixing drizzle down the sides of the bowl, turn bowl occasionally to make sure all sides are drizzled. Keep on mixing (not necessarily pouring water) until a soft dough is established. It should be moist and slightly gooey to the touch. Plop dough out on some cellophane cut long enough to form a tube (should be about the length and diameter of an inner cardboard of a paper towel roll) cover and let sit in fridge for at least 10 but no more than 30 minutes. While tortilla press (or griddle) is heating divide into equal balls shaped like hockey pucks. Use a gram or an oz scale to weigh the total dough; this will help you make each ball duplicate. Begin pressing the ball that you first made first and work your way through the line of dough balls in that order. The setting of the hockey pucks helps the tortilla hold together better. Follow manufacture directions on tortilla press or press out by hand with rolling pin. Modifications: Add garlic salt instead of salt and olive oil as the oil for savory seasoned tortillas. Add 1 TBS succanant or sugar and 1 tsp cinnamon to make sweet breakfast/dessert tortillas EnJOY!

Christabel first made this yummy pizza in cookery club at school. Follow her method and try it for yourself. Method: I fried a chopped onion and 2 garlic cloves for about 5 minutes, then added a tin of peeled tomatoes but drained off most of the juice, and a big dollop of tomato puree. I had already chopped up some fresh basil and oregano so added this to the frying pan and cooked until the mixture was bubbling. I then let the mixture simmer for 10 minutes until most of the liquid had gone, and then left it to cool. I cut a loaf of ciabatta bread in half lengthways and spread the tomato and herb mixture on top. I thinly sliced a block of mozzarella into rectangles and placed these on top of the herby tomato sauce. I mixed a spoon of olive oil with salt, pepper and more chopped fresh basil and parsley and spread it over the mozzarella, then sprinkled over 2 tablespoons of parmesan cheese. The pizza was baked in the oven until the cheese started bubbling.

People often ask me for my pancake recipe. Pancakes are also known as flapjacks, hotcakes, and griddle cakes. You can buy packaged mixes but they're expensive and unnecessary. Let me show you how easy and economical it is to make pancakes from scratch.
All you need is:
1 ¼ cups, or 180 grams of sifted all-purpose flour.
1 tablespoon or 10 grams of baking powder
1 tablespoon, or 10 grams of sugar
½ teaspoon, or a good pinch of salt
1 beaten egg
1 cup, or 250 mL of milk
2 tablespoons or 30 mL of olive or sunflower oil
and an ungreased crepe pan.
Sift the flour, baking powder, salt, and sugar into one bowl.
Then mix the milk, oil, and beaten egg into another bowl. Pour the mixture over the flour.
Stir using a wooden spoon until the dry flour disappears.
The batter must be lumpy, so donât over-mix it. This is the secret for fluffy and light pancakes.
Pre-heat the crepe pan.
Using a small ladle, or a large spoon, put some batter onto the pan. Start with a circle of about 10 centimeters or so until you ...
Slim Khezri cooks Lablabi (ÙØ¨ÙابÙ) : a Tunisian dish based on chick peas, small pieces of bread and a thin cumin-flavoured soup. It is commonly eaten in cheap restaurants. Partially-cooked egg is often added to the mix, along with olive oil, harissa, capers, olives, and sometimes tuna, garlic and vinegar. A traditional, but rarer, version, hergma is made with cows' trotters.
In Assyrian cuisine there is also a chick-pea based dish called lablabi. The version in Iraqi cuisine is boiled chick peas with some lemon juice, mainly eaten during winter as it is served hot.
Ingredients:
Servings: 8
2 cups dried garbanzo beans or 2 cups canned chick-peas
4 -6 garlic cloves, minced
1 tablespoon harissa
1 tablespoon cumin
salt, to taste
1 lemon, juice of
6 tablespoons olive oil
3 slices of day-old bread, preferably day-old French bread, broken into small pieces
