Ingredients:
6 cups grated green papaya
2 medium sized carrots (In your preferred cuts- strips or other designed shapes)
3 pcs baby cucumber, thinly sliced
½ cup raisins
2 medium sized red onions, sliced
golf ball sized ginger, cut into strips
1 head of garlic, thinly sliced
1 red bell pepper, cut into strips
1 tablespoon peppercorns
4 cups vinegar
¼ cup salt
1 ½ cups granulated sugar
**we use coco vinegar in this video
Instructions:
1. Sterilized the airtight jars or your tight-fitting lid containers.
2. Wash papaya. Peel. Grate.
3. In a bowl, combine grated papaya and salt. Mix well.
4. Let it stay overnight or least six hours to dehydrate the papaya.
5. After dehydrating the papaya….
6. Ready your other ingredients. Slice carrots, onions, bell peppers, baby cucumber and ginger
7. Squeeze papaya to remove excess liquid. Then set aside the papaya.
8. Add in a bowl with the papaya:
• carrots
• onions
• bell pepper
• ginger
• baby cucumber
• raisins
9. Pickling mixture: In a saucepan boil vinegar over a medium heat for 2-3 minutes.
10. Add sugar. Mix until well blended.
11. Add garlic.
12. Add peppercorns
13. Simmer for another 2 minutes.
14. Turn off the heat.
15. Cool the pickling solution for at least an hour.
16. Prepare the sterilized air tight jars.
17. Fill with the papaya-vegetable mix.
18. Pour the pickling solution in each bottle/jar just enough to cover the papaya-vegetable mix ingredients.
19. Cover and Refrigerate.
20. Best served after 1-2 days to allow flavors to develop.
21. Side-dish Atsara/Atchara can last up to 6-8 months when carefully and properly prepared.

CHICKEN HAMONADO RECIPE l WHOLE CHICKEN HAMONADO WITH PINEAPPLE JUICE l HOW TO COOK CHICKEN HAMONADO
Ingredients :
1 whole chicken (4 lbs )
1 - 1 ½ cup pineapple juice
¼ cup pineapple chunks (optional)
1 head of garlic, crushed
½ cup sugar
¼ cup soy sauce
1 tablespoon salt
¼ teaspoon ground pepper
2-3 pcs bay (laurel) leaves
2 tablespoons oyster sauce
1 tablespoon cornstarch
¼ cup of water
2 tablespoon oil for basting (or melted butter)
twine for trussing
Directions :
Marinating the Chicken:
(1) Combine the following ingredients:
a. pineapple juice
b. sugar
c. soy sauce
d. 3-4 cloves garlic
e. ground pepper
f. salt
g. oyster sauce
(2) Mix
(3) Add the chicken.
(4) Rub the mixture all over it.
(5) Put everything inside the sealed plastic bag. If possible, keep all sides soaked in the mixture (turn) every 2 hours.
(6) Let it stay overnight or at least 6 hours.
Marinating is up:
(1) Take the chicken out from the plastic bag.
(2) Fill the inside with garlic and bay leaves. (you may use as well the garlic used in the mixture).
(3) Tie the chicken snugly (trussing) with the kitchen twine to make sure the legs and wings stay close to the body. Trussing helps to cook the chicken evenly.
(4) TIMER : Pre-heat the oven to 350 degrees F ( 180 degrees C)
(5) Set the chicken in the roasting rack
(6) Transfer the leftover marinade in the bowl. Divide it into 2. One for basting. One for the gravy mixture later.
(7) BASTING MIXTURE: Add a little bit of oil (or melted butter if you wish). Set aside for basting later.
(8) Once the oven temperature is set, cook the chicken for 30 minutes
(9) After 30 minutes, start basting. (To make sure the chicken is succulent and full of flavor)
*** Using your basting brush, make sure the marinade is spread evenly.
(10) Cook for another 15 minutes, then baste the chicken again.
(11) This time, turn the chicken on the other side and baste.
As a rule of thumb, you should baste at least 3 times (every 15-20 minutes) during the whole process.
(12) Cook for another 30-40 minutes (@350 degrees).
(13) Then, increase the temperature to 375 degrees.
(14) Cook each side for 10 - 15 minutes. The chicken must be cooked by this time.
(15) Glazed it with honey before serving.
(16) Yummy-licious Honey Glazed Chicken Hamonado is now ready to be served !
Note: The most reliable way of checking if the chicken is ready is to use the thermometer to measure the internal temperature. Should be at 165 degrees F minimum.

Homemade Jollibee Fried Chicken
Crispy Fried Chicken ala Jollibee
Ingredients:
1 kg chicken or 1 whole chicken cut into pieces
1 cup flour
1 cup cornstarch
½ teaspoon ground black pepper
½ teaspoon salt
1 teaspoon garlic powder
5 spice (optional)
Oil for frying
Instructions:
(1) Marinate the chicken for an hour with salt and pepper. Set aside.
(2) For the Breading: Mix the following ingredients:
Flour
Cornstarch
Ground black pepper
Garlic Powder
Salt
5 Spice (optional)
(3) Dip the chicken on both sides in the breading mix.
(4) Heat the oil in high heat ( 350 degrees).
(5) Fry the chicken meat in the pan until golden brown.
(6) Remove the chicken from then pan. Drain in the strainer. Or dry it in a plate with paper towel to make sure the oil is well drained or absorbed in a paper towel.
(7) Your crunchy, crispy and juicy fried chicken ala Jollibee Chicken Joy is ready to be served.

Simple GRAVY Recipe ala Jollibee
Ingredients :
3 tablespoons butter
4 tablespoons flour
1 beef cube
2 cups beef broth / beef stock
¼ ground pepper
¼ teaspoon salt
Instructions:
(1) Flour Mixture: Dissolve flour in ½ cup of broth / stock
(2) Melt butter in a pan over lowest heat
(3) Add the bouillon cube. Dissolve in the butter.
(4) Add the 1 ½ cup of broth
(5) Simmer over low heat for 2-3 minutes
(6) Add the cornstarch mixture
(7) Continue whisking until sauce is smooth and thick.
(8) Quick, Easy, Simple Gravy is now ready to be served!

600g New Zealand Lamb mince
2 garlic cloves, peeled and finely chopped
1 lemon, zested
1 chilli, red or green, finely chopped
1 tsp smoked paprika
½ tsp ground cinnamon
2 tsp rosemary, finely chopped
a large handful parsley, chopped
100g feta cheese, crumbled
4 tbsp breadcrumbs (avoid if gluten free obviously – but it helps bind the mixture)
2 tbsp olive oil
2 red onions, peeled and thinly sliced
500ml lamb stock
1 x 400g can chopped tomatoes
a small handful mint leaves
Creamy potato gratin
2 tbsp butter, melted
800g potatoes, skins scrubbed then thinly sliced
180ml double cream
1 clove garlic, crushed
½ teaspoon fresh thyme leaves
Cooking method:
1. Mix the mince, garlic, lemon zest, chilli, smoked paprika, cinnamon, rosemary, half the parsley, feta and breadcrumbs.
2. Season, then divide the mixture into 8 and roll into balls.
3. Rest for 15 minutes.
4. Heat 1 tbsp of the oil in a pan and cook the meatballs all over until browned. Once done, remove from the pan and place in a dish.
5. In the same pan add a little more oil and sauté the onions until coloured, scraping up the meat that has caught on the bottom of the pan.
6. Add the stock and tomatoes and bring to a boil.
7. Return the meatballs to the pan and roll them around a bit, then put a lid on and cook over a rapid simmer for 15 minutes.
8. Take the lid off and scatter on the remaining parsley and mint.
9. For the gratin, butter a 1.5 litre baking dish
10. Bring the cream, garlic and thyme to a simmer with a little salt and 120ml water. Lay 1/3 of the sliced potato in the dish. Pour 1/3 of the cream mixture on. Repeat twice more.
Lay a sheet of parchment on top. Bake in the centre of the oven for 30 minutes until the potatoes are almost cooked through, then take the parchment off and continue to cook until golden.
