Cook Time: 5-8 min. Ingredients: 4-5 fresh bone-in pork chops 1 box House-Autry Pork Breader 1 medium bowl of water Corn oil for frying Directions: Heat oil in heavy cast iron skillet to 375°F. Make sure oil fills up no more than a quarter of your skillet. You want the oil to only cover about half of your pork chops, so if you’re using a 2-inch deep skillet, you’d need about 1/4 inch of oil in the bottom. To check temperature, sprinkle a little breader mix in hot oil. If it bubbles up golden brown, you’re ready to cook. Take some of the Pork Breader and pour it onto a large plate. Take each chop, dip it in the water, shake off excess, and roll it in the breader on the plate, covering each side thoroughly. You can also put the chops in a large re-sealable bag with the breader and shake to coat. Place coated chops in the heated oil carefully - leaving plenty of room around them for the oil to flow. Fry for 5-8 minutes until golden brown. Use wire racks and paper towels to drain excess oil. Meal Suggestions: Serve with mashed potatoes and gravy, fresh garden vegetables or favorite casserole for a great family meal.

Do not overfill Leave at least 2 inches of space at top of fryer or pan. Use “high smoking point” frying oil such as peanut, safflower, sunflower or canola. In a bowl, combine the House-Autry Hushpuppy Onion mix, chopped clams, scallions and clam juice. Stir until combined. To test the oil temperature, place a little piece of the dough into the oil. If it browns nicely after 60 seconds, the oil is ready. Take two soup spoons - one for the batter and one to push it off into the oil - and gently place the hushpuppy batter into the oil. Cook for 5 or 6 minutes until golden brown. Use slotted spoon to remove Yankee Hushpuppies. Place on paper towels on wire racks to drain.

5 pounds of chicken wings and/or drummettes
2 cups water
1 package of House-Autry Medium Hot Breader mix
Oil for frying
Directions:
In a cast iron skillet or electric frying pan, preheat oil to 375°F. Test with thermometer or by sprinkling a little breader mix in oil - if it bubbles up golden brown, oil is ready.
Measure out 2 tablespoons of Medium Hot Breader mix and set aside in small bowl. Moisten wings and/or drummettes in water and shake off excess. Coat chicken in breader mix until all pieces are coated.
When oil is proper temperature, gently place wings/drummettes into the skillet, leaving room around each piece for oil to flow. Fry chicken for 8-10 minutes or until golden brown. Drain on wire racks with paper towels.
Meal Suggestions:
Make your own Buffalo-style sauce for dipping. Serve with celery and carrot sticks, blue cheese or ranch dressing. Reheats easily - wrap in foil and heat in 350° F oven or on grill for 10-12 minutes.
